DEVELOPMENT ASSOC:
Thanks to everyone who supported our first ever cookery demonstration. It was a great night , everyone enjoyed the demo and all the tasting that had to be done. ! Thanks to Anne Hickey who looked after all the arrangements. We began with the Cheese & Wine . Anne sourced most beautiful cheeses from Cahill's Farm Cheese, Ballintubber, Newcastle West. Helen Cahill generously donated all the cheese on the night. We tasted her Irish Whiskey, Irish Porter, Chili & Pepper and Garlic & Chive Cheeses with the required glass of wine, which Mike O'Meara had dropped to the door.
Our demonstrator was Deirdre Doody from Feohanagh who was excellent as well as entertaining and made it look so easy, as chefs are wont to do ! She got through seven different recipes, throwing in tips and hints as well as tasting sessions. She began by making two different breads, Sundried Tomato and Rosemary and a healthy brown bread. She continued with a ' Smoked Salmon and Spinach roulade' for starter and a Basil pesto. The latter we tasted with the breads and they were gorgeous. She then made ' Carrot and Coriander soup which was delicious. The main course consisted of Crispy Chicken with a Potatoe & Basil pesto stuffing which was very filling, but that didn't stop us sampling. Then we saw how to make the lightest most divine, Strawberry Roulade, which Deirdre insisted we all taste.!! Raffle winners - Hamper - Nora Farragher, Hamper - Eileen O'Connell, Hamper - Nora Mulqueen, Wine/Candle/Plant - Dolores Chawke, Biscuits/Candle - Marie Bennett and Limerick Teddy - Trudy Trainor. Many thanks to the gents who helped out also - Tom, Steven and Mike .
Aerobic Classes: We have come to the end of our session of aerobics/toning classes with Aoife Hayes. We held them on Tuesday mornings and Wednesday nights and I think everyone enjoyed them. Aoife was excellent as an instructor and the hour seemed to fly at each class. We were all definitely allot fitter at the end of the ten sessions. We may have to get her back again after Christmas to help us get rid of those extra calories that are bound to accumulate over the holidays..!!
At the end of the night, Anne Hickey presented a cheque of € 300.00 to Nora Farragher for the Vincent De Paul Society.

Two parents out of the full group, Marian Sheehy and Fiona Griffin, completed all three modules, which was a marvelous achievement.

Again, this year, Joe and Bernie Carroll have rigged up their festive lighting at their home in Coolruss, in aid of St. Joseph's Foundation. It will be lighting from 5.30pm to 10.00 pm daily, so bring your camera.
YOUTH CHOIR:
The members of the youth choir visited St. Itas Hospital, Newcastle West last Sunday 11th to entertain patients. They sang in both day rooms and also visited a number of wards for patients who were not mobile. Their singing brought much joy and was very much appreciated by both patients and staff . Thanks to Kathy Noonan for the organising and the parents for giving their time transporting the children and adding their voices to the choir even. A practical example of the real Christmas message.!
ADULT CHOIR: We welcome back Roisín Sexton, organist, to the choir again. Since she played with us previously, in St. Johns, she had a little baby Conor, last August, so belated congratulations. We have been rehearsing for Christmas and will do so again, next Monday 19th at 7.30pm. We would very much welcome new members to come and join us. If you have been blessed with a singing voice , it is a shame not to use it.
